Some mornings I want a big, elaborate breakfast, and then there are mornings like today, when I just want something fresh, filling, and ready in under fifteen minutes. This plate is exactly that, and honestly, it has become one of my most repeated breakfasts over the past few months.

I started making it out of laziness, if I’m being real. I had eggs in the fridge, one avocado that was finally ripe (you know how hard it is to catch that perfect moment), and a handful of strawberries that needed to be eaten before they went soft. I added a banana because it was sitting on the counter, and suddenly I had a full breakfast without turning on anything more complicated than a pot of water.

The eggs come first, because they take the longest. I bring a small pot of water to a gentle boil, lower in 2 eggs, and let them cook for about 10 minutes for a firm, jammy-to-set yolk. Then straight into a bowl of cold water for a few minutes, which makes peeling so much easier. Once peeled, I cut them in half and finish with a small pinch of salt and freshly cracked black pepper. That little bit of pepper makes a bigger difference than you’d expect.

The avocado is the star of the plate. I slice half a ripe avocado into thick wedges and fan them out next to the eggs. Then comes the part I never skip: a light sprinkle of sesame seeds on top. It adds a tiny nutty crunch against the creamy avocado, and it makes the whole plate look like something from a café, even though it takes about thirty seconds. If you like, a few drops of lemon juice keep the avocado bright green and add a fresh edge.

The fruit bowl is my sweet finish. I slice about 6 strawberries and 1 small banana into a bowl. Nothing else, no sugar, no honey. Ripe strawberries and a soft banana are already sweet enough, and eating them alongside the savory eggs and avocado feels balanced, like I’m getting a little snack and a proper meal in the same sitting.

What I love most is how satisfying this is without feeling heavy. The eggs bring protein, the avocado brings healthy fats that keep me full, and the fruit gives me natural sweetness and freshness. I usually don’t get hungry again until well into the afternoon, which is not something I can say about a bowl of cereal or a piece of toast.

It’s also incredibly flexible. No avocado? Use cottage cheese or a spoonful of plain yogurt. Strawberries out of season? Try blueberries, orange segments, or apple slices. Not an egg person? A slice of whole-grain toast with a little butter works just as well. The idea is simple: something with protein, something creamy, and something fresh and sweet.
