Thirteen months ago, I decided I was done putting my health off. Today, I’m more than 100 lbs lighter. There was no magic trick behind it, just a lot of small, repeatable choices, and most of them happened in my kitchen.
In this post I’m sharing one of my go-to meals: a fresh tofu and tomato salad with cucumber, black sesame, and chili flakes. It’s quick, filling, and tastes far better than “diet food” has any right to.
Why Food Was the Turning Point
I used to think losing weight meant eating boring, tiny meals. What actually worked was learning to make food I looked forward to. When a meal is colorful, flavorful, and satisfying, you don’t feel like you’re sacrificing anything. That mindset shift did more for me than any rule or plan.
The Meal: Tofu & Tomato Salad with Sesame and Chili
What you’ll need (serves 1-2):
- 1 block of firm tofu, cut into bite-sized cubes
- A handful of mixed tomatoes (red, orange, and yellow cherry or heirloom varieties), halved or chopped
- 1 cucumber, chopped
- Fresh herbs, finely chopped (mint or parsley both work well)
- 1 tbsp black sesame seeds
- 1 tsp chili flakes (adjust to your taste)
- A simple dressing: a splash of soy sauce or salt, a little rice vinegar or lemon juice, and a drizzle of olive or sesame oil
How to make it:
- Pat the tofu dry and cut it into cubes.
- Toss the tofu gently with the chili flakes, sesame seeds, herbs, and dressing. Let it sit for 10 minutes so it soaks up the flavor.
- Add the tomatoes and cucumber and toss once more.
- Serve right away, or chill it for 15 minutes if you like it cold.
It takes about 15 minutes, and there’s no cooking involved.

- High in protein. Tofu keeps you full for longer, which helps you avoid snacking.
- Loaded with vegetables. Tomatoes and cucumbers add volume, freshness, and hydration for very few calories.
- Big on flavor. Herbs, sesame, and chili make it feel like a treat, not a compromise.
